I don't quite get the logic of "if he can do it once he can do it all the time." You'd think coaches would want to know the current level of consistency a player displays.

The person who made this analysis approach famous (for me) was Bill Walsh with the 49ers. He said this exact thing after he drafted Joe Montana out of Notre Dame in the 3rd round.
Walsh believed if he saw a player do it once it was a coaches job to make sure he could do it every time. He thought talent was often overlooked because they weren't pushed to be consistent and he could take advantage of that.
